Type 1 Diabetes and Gluten Allergy

The journal Diabetes recently published this study demonstrating that a large percentage of people with Type 1 diabetes have a diabetes-related inflammatory response to wheat polypeptides (gluten). This is just one of numerous papers reporting similar findings. Type 1 diabetes is characterized by an immune attack on the pancreas. It is not restricted to children, and can develop later in life mixed with Type 2 diabetes.
